The September 24-30 issue of the National Catholic Register carries a "2006 Collegiate Guide" that lists 21 Catholic colleges and universities that positively answered 10 survey questions about their Catholic identity. Here they are, with their locations in parens:

Does anyone have any recommendations for elementary schools in LA (esp. in the SF Valley)?
That is great to see the University of St. Thomas (Houston) on that list. It is a little surprising, but the current President hasn't done enough damage yet to its Catholic identity (thank goodness!)

One private Catholic school that I have heard is good, although I do not know any of the parents, is:

Thanks Q. I know some folks at St. Monica's. From what I have heard, it is a great school with heavy parent involvement.
I must say that some of the Institutions listed probably replied with tongue and cheek, especially the Jesuit ones and the CUA.
